These are called "cams." These are part of a leverage system that includes cables and pulleys that allow the bow to increase the force used to push the arrow forward. You might think that if your motivation to learn is hunting that you should start with the compound type. But for this activity it is also recommendable learning with a recurve bow.

Later, when you feel ready to start hunting you could make the switch to the compound bow. Choosing your first bow is very important because it is the perfect introduction to the world of archery.
